I guess I know what I'll be doing this weekend!
I can these in a mixture of oil and vinegar with chopped garlic and oregano.

Is that your garden?
Most everything is done for the season except for these peppers, a few bunches of endive, and a bunch of parsley.
In addition we grew tomatoes, green beans, and lettuce.

I've canned some with just vinegar; the oil and garlic sounds good; how much oil would you put in a pint with vinegar?

3 parts vinegar to 2 parts canola oil.
I don't really measure the garlic and oregano, I can them in half=pint jars, and just put approximately a half tsp. of dried oregano and a half tsp. of chopped garlic in each jar.
