What's for Dinner, Wed., April 8, 2026

Appetizer: Eggplant/garlic/sweet red pepper spread on crackers. Some with celiegine.

Salad: cucumbers & red onions.

Main course: Beef bulgogi with raw red onion.

Kombucha: unflavored.

Dessert: Organic strawberries and ice cream over toasted waffle.

Decided to make a recipe I haven’t made in awhile. Steam-fried in evoo and veggie broth: chopped onion and minced garlic. When soft I added butternut squash cut into cubes, cut green beans, more hot vegetable broth, chickpeas, a Tbps of tomato paste, turmeric, garlic powder, cumin, hot pepper flakes, and black pepper. I covered the dutchie and put it on simmer until the veggie were done. Served over whole wheat couscous with roasted pine nuts. Cheers!🥂
