What's for Dinner, Mon., Jan. 13, 2025

Turkey meatballs in red pepper sauce with miniature mozzarella meatballs (ciliegene). Grated parm and chopped basil (from an indoor pot) over the top, swirl of olive oil.

Steamed broccoli .

Cherry kombucha

Dessert: Half an apple and a few slices of cheddar.
Ginger tea.

I found a frozen adobo chicken grain bowl at Aldi and it was quite tasty. Had some honeydew melon for dessert.

My general guidelines are:
- one can of coconut milk
- one small jar of peanut butter
- one medium squash (raw, peeled, chopped)
- two or three quarts of stock
onion (brown this first), fresh ginger, garlic, lime juice, curry powder, cilantro, chili peppers, green peppers, "chipotles in adobo", any available green vegetable, carrots, tomatoes, etc. to taste

It gets cooked up before you add any peanut butter or coconut milk. Add those while pureeing.

4. Porcini Mushroom Soup Deluxe

Doctored up a couple of containers of Aldi’s Organic Porcini Mushroom soup. Steam fried in veggie broth: chopped onions, thinly sliced cabbage, button mushrooms and garlic. When done added a little cooked brown rice, chopped tofu, parsley and steamed peas. Added the soup and heated until done. Had toasted sprouted multigrain bread with red pepper hummus on the side. Cheers! 🥂
